Southwest Vegetable Blend

Ingredients
  • 2 yellow squash, chopped
  • 1 zucchini, chopped
  • 1 red onion, chopped
  • 1 head of broccoli, chopped
  • 6 purple potatoes
  • 2 red peppers
  • 2 large carrots
  • southwest seasoning
  • seasoned salt
  • oregano
  • 2 tbsp olive oil
Directions
  1. Mix chopped squash, zucchini, red onion, broccoli, potatoes and carrots.
  2. Combine southwest seasoning, seasoned salt, oregano and oil. Drizzle over vegetables and toss.
  3. Bake in oven at 400°F for 50 minutes.
