Pasta with Beans and Tomato Sauce

Ingredients (4 servings)

  • Whole wheat pasta, 1 box
  • Pumpkin seeds, 2 cup
  • Kidney beans, 1 can
  • Spinach, 1 can
  • Tomatoes, 1 can, crushed
  • Coconut oil
  • Onion, diced
  • Garlic powder
  • Salt
  • Black pepper

Boil the pasta according to the instructions on the package.

While the pasta boils, fry the onions, garlic and pumpkin seeds for 2-3 minutes.

Add the kidney beans, crushed tomatoes, seasoning and spinach. Let it simmer 2-3 minutes.

Take 1/4 of pasta and beans with tomato sauce and serve it on a plate.

Experiments:

  • Remove pumpkin seeds
  • Double tomatoes (1 diced, 1 crushed)
  • Add italian seasoning
  • Add tomato paste
