Mel’s Black Bean & Quinoa Bowl

Ingredients
  • 1 cup uncooked quinoa
  • 2 cups water
  • 2 Roma tomatoes, diced (may sub one can petite diced tomatoes)
  • 2 cans black beans - drained
  • 1 can corn - drained
  • 2 peppers diced (mixed color preferable)
  • 1/2 large red onion diced
  • 1/2 cup green onion diced
  • 1 Avacado
  • 1 Lime
  • 1/2 -1 tablespoon of red wine vinegar
  • Olive Oil
  • Garlic powder
  • cumin
  • salt
  • pepper
  • (Optional) Seeded and diced jalepano
  • (Optional) 1/3 cup fresh cilantro chopped
  • (Optional) 1 lb shredded chicken
Directions
  1. Cook quinoa according to package directions
  2. Sauté peppers and onions in olive oil until onions are transparent 
  3. Squeeze lime into pan and add red wine vinegar
  4. Add beans, tomatoes, corn, seasoning, and optional items - cook until heated through
  5. Mix in cooked quinoa
  6. Dice avacado to serve on top of bowl (may reserve some green onions and/or tomatoes uncooked to top bowl as well)
