Black Bean Quinoa Salad
Ingredients
- 1 cup uncooked quinoa
- 2 cups water or broth
- 2 roma tomatoes (diced)
- 1 ripe avocado (diced)
- 1-15 oz can black beans (rinsed and drained)
- 1-12 oz can corn (drained)
- 1 bell pepper (diced)
- 1/4 cup green onion (diced)
- 1 jalapeno pepper (seeded and diced)
- 1/3 cup cilantro (chopped)
- 1/4 cup vegetable oil
- 1 1/2 tablespoon lime juice
- 1 teaspoon sugar
- 1 teaspoon cumin
- 1/4 teaspoon garlic powder
- 1/2 tablespoon red wine vinegar
- 1/8 teaspoon salt
- 1/4 teaspoon pepper
Directions
- Cook quinoa according to package directions and allow to cool.
- Combine quinoa, tomatoes, avocado, black beans, corn, bell pepper, green onion, jalapeno and cilantro in a large bowl.
- In a small bowl, combine all dressing ingredients and mix well. Pour over vegetables and toss to coat. Add quinoa and combine.
- Refrigerate until ready to serve.
