Black Bean Quinoa Salad

Ingredients
  • 1 cup uncooked quinoa
  • 2 cups water or broth
  • 2 roma tomatoes (diced)
  • 1 ripe avocado (diced)
  • 1-15 oz can black beans (rinsed and drained)
  • 1-12 oz can corn (drained)
  • 1 bell pepper (diced)
  • 1/4 cup green onion (diced)
  • 1 jalapeno pepper (seeded and diced)
  • 1/3 cup cilantro (chopped)
  • 1/4 cup vegetable oil
  • 1 1/2 tablespoon lime juice
  • 1 teaspoon sugar
  • 1 teaspoon cumin
  • 1/4 teaspoon garlic powder
  • 1/2 tablespoon red wine vinegar
  • 1/8 teaspoon salt
  • 1/4 teaspoon pepper
Directions
  1. Cook quinoa according to package directions and allow to cool.
  2. Combine quinoa, tomatoes, avocado, black beans, corn, bell pepper, green onion, jalapeno and cilantro in a large bowl.
  3. In a small bowl, combine all dressing ingredients and mix well. Pour over vegetables and toss to coat. Add quinoa and combine.
  4. Refrigerate until ready to serve.
